Halloween is coming, and what could be better than enjoying homemade Halloween shortbread while opting for a healthy recipe? These shortbreads made with butternut squash and wholemeal flour are not only delicious, but also rich in autumnal flavours. Plus, with only 167 kcal per serving, you can enjoy them without guilt. Take the butter out at room temperature to soften it. Meanwhile, cook the butternut squash for 30 minutes in an oven preheated to 180°C (or steam). Let the squash cool, then make a very smooth purée.
In a bowl, mix the softened butter with the Muscovado sugar until creamy. Then add the wholemeal flour and the butternut squash puree, mixing well with each addition. Then add the orange zest .
Finish the preparation by adding the beaten egg. Mix well, then place the dough in the refrigerator for 30 minutes to let it rest.
Preheat your oven to 180°C. Shape the shortbreads using molds or directly on a baking sheet covered with baking paper. Bake for 10 to 15 minutes, until the shortbreads are lightly browned.
